Kristofor Lofgren, 26, is the creator and owner of Bamboo Sushi, the first certified, sustainable sushi restaurant in the world, located in Portland, Oregon. At 23, Kristofor co-founded the critically acclaimed Japanese restaurant, Masu East, which he has managed successfully since 2007. Since receiving his undergraduate degree from the University of California, Berkeley, Kristofor has become a dedicated "ecopreneur”, viewing business as the optimal platform to quickly affect widespread environmental change. In creating Bamboo Sushi, Kristofor hopes to educate consumers on the importance of making conscientious decisions about their food choices and the direct impact those choices have on the health of our planet. Kristofor’s ultimate goal is to develop a new model for sustainability in the restaurant industry–creating a system of checks and balances to ensure transparency and accountability–which he hopes will be adopted by other business owners, thereby achieving even greater change.
Brandon Hill, 30, is the Head Sushi Chef at Bamboo Sushi. Brandon has been working in the Pacific Northwest culinary scene since 2000, gaining his comprehensive sushi knowledge and further developing his exceptional knife skills as the Sous Chef at Wasabi Bistro and then Head Sushi Chef at Bonzai Sushi in Seattle, WA. During his first year as a Sous Chef at Masu in Portland, OR in 2005, Brandon quickly established himself as a promising young star and was promoted to Head Sushi Chef for Masu East (now Bamboo Sushi), where he has been excelling for the last two years. Bamboo Sushi presents a unique opportunity for Brandon allowing him to combine his lifelong love of nature with his culinary passion for Japanese cuisine while incorporating increasingly important principles of sustainability.
